In this paper, an analytical review of the literature on the method of determining the antioxidant capacity. A study of the antioxidant capacity of herbal extracts and grape shock extracts by the potentiometric method with the potassium (III) hexacyanoferrate / potassium hexacyanoferrate (II) system, potentiometric titration and the Folin-Chocalteu spectrophotometric method was carried out.
